Chocolate Balls (Chokladbollar)
A no bake traditional Swedish recipe that you can make on your own for a sweet treat for your Fika or have fun making it with children or other adults.
3 dl oatmeal (approx. 1 ¼ cups)
1 dl sugar (slightly less than ½ cup)
½ Tbs vanilla sugar (can also use vanilla extract)
2-3 Tbs cocoa
100 g softened butter (about 7 Tbs, slightly less than one stick)
2 Tbs cold strong coffee
Put everything in a bowl in the order the ingredients are listed. It helps to cut the butter in smaller pieces. Mix together with spoon or clean hands. Make balls and roll in pearl sugar or coconut. Chill in the fridge. Eat and enjoy!

7 tbsp butter
1-3/4 cup flour
2 tsp baking powder
1 tsp sugar
.5 tsp salt
1-1/2 cup water
Melt the butter and let it cool.
Mix the dry ingredients in a bowl. Add the water to the dry ingredients and mix until it forms a smooth batter. Last, add the cooled butter to the batter.
Bake in a waffle iron on the hottest setting and serve with jam and fresh whipped cream.
Swedish savory breakfast rolls
2 cups flour
1/4 tbsp salt
1 tbsp baking powder
2 tbsp seeds
2 tbsp molasses or syrup
1 cup water
Mix together the dry ingredients.
Add the wet ingredients and mix together until just blended.
Using two spoons form 10-12 balls on a parchment paper covered baking sheet.
Bake for 12-15 minutes in a 400 degree oven.
Kladdkaka (Swedish sticky chocolate cake)
This cake is very common in Sweden. It is similar to a brownie, but heavier and stickier. It is usually baked in a round formed and served as cake with a dollop of fresh whipped cream on the side.
1-1/4 cup flour
2 cups sugar
1-1/2 stick melted and cooled butter
8 tbsp cocoa powder
1/2 tsp salt
1 tbsp vanilla sugar or 1 tsp pure vanilla extract
Mix all ingredients and put in greased 9″ pan with removable sides. Bake for 40-45 minutes at 350F.
