Soup & Pancake Pop-up Cafe

To celebrate vegetarian day and Andersonville Hygge Fest, the Museum will serve split pea soup and Swedish pancakes.
This Swedish split pea soup, known as ärtsoppa, is an immensely gratifying, warm soup traditionally made from dried yellow peas and served on Thursdays in Sweden, followed by Swedish pancakes. The tradition of eating pancakes with pea soup on Thursdays goes back hundreds of years to when Sweden was more heavily populated with Catholics. Since Catholics were fasting on Fridays, the day before required a big, hearty meal. A large serving of meaty pea soup followed by a heavy dessert of pancakes with sweet toppings was both filling and commonly available to even those on a tight budget. The pea soup at the pop-up cafe will be a vegetarian version.
